Aubergine Casserole

A light aubergine casserole with tomato, mushroom and courgettes. It is quick to make and delicious.

As it is my birthday today, I was looking for something special to cook and had decided on asparagus. But in times of corona and travel restricitons, you cannot always have what you want… and need to decide on what to cook when in the supermarket. Some shelves were empty, but there was an aubergine and some courgettes and mushrooms left- and the casserole was quite special, too.
