Baked Apples

After spending most of the weekend on the sofa trying to get rid of a cold, I felt up to some cooking on Sunday evening. The baked apples are easy to make and a great (and healty!) dessert for the whole family.
I think that using less sugar (3 or 4 teaspoons in total) is still sweet enough. Adding 1/2 tsp cinnamon gives a lovely wintery flavour. Also great when served with custard or vanilla ice cream (dairy or plant-based).

Apple Brown Betty

An interesting alternative to Apple Crumble. Great served hot with some vanilla ice cream or cold custard (use vegan ice cream or custard, if preferred).

For a gluten-free version, use gluten-free breadcrumbs and cornflakes.

Apple Sauce Cake

The Apple Sauce Cake is very rich and has a lovely taste of spices. It is a perfect autumn or winter cake and makes a great desert when served warm with vanilla ice cream. Also good when served at room temperature with a cup of tea.

This cake freezes well. Defrost and warm in the microwave for a few seconds before serving.

Gluten-free: Use same amount of gluten-free flour mix (e.g. “Freee plain white flour” from Doves Farm) and add 2 teaspoons of potato fibre or 1 teaspoon of psyllium husks.

Vegan: Use margarine instead of butter and replace the egg with 1 tablespoon flaxmeal and 3 tablespoons water (to be mixed with the flour).
