Mushroom Loaf

From: Linda McCartney’s “Home Cooking”, p. 112.

A baked veggie loaf made of TVP, potatoes, and mushrooms.

This loaf was a little crumbly when finished (I used gluten-free breadcrumbs and dried TVP) and I found that it had an eggy taste which I did not like so much. Maybe it could do with more spices, e.g some paprika powder (smoked?) or nutmeg?

If using gluten-free breadcrumbs, this is a gluten-free loaf. For a vegan loaf, use plant-based milk.

Burgers á la King

Burger chunks in a white sauce with onion, peppers and mushrooms.

This is one of the endless variations of burger chunks that are presented in this cookbook. I got a little tired of them, but my family is asking for more. So I continue on the quest to cook my way through the whole book…

This sauce is really very tasty and meat-lovers will like this a lot. I substituted the burger chunks for cubed smoked tofu which was great as it did not crumble during the cooking time and added a lovely smokey flavour to the dish.

Vegan: Use plant-based milk for the white sauce.

Gluten-free: Use a gluten-free flour blend for the white sauce and make sure the burgers you are using are gluten-free, too. Or use smoked tofu instead.

Green Beans and Mushrooms in Sour Cream

From: Linda McCartney’s Home Cooking, p. 137

Sautéed mushrooms and steamed beans, served in sour cream.

This is a very quick recipe for a veg dish with no surprises but also no disappointments 😉
As usual, I would recommend using less sour cream and if you do not like the slightly sour taste of sour cream you could try using cream cheese (vegan, if you like) instead.

Stuffed an Broiled Mushrooms

From: Linda McCartney’s Home Cooking, p. 125

Grilled mushrooms filled with a TVP and onion stuffing.

My husband made these stuffed mushrooms for us and we enjoyed them. However, the stuffing was a little too plain and the TVP remained crumbly. Adding some (vegan) cream cheese or a tomato paste would be a good addition.

Vegan: Use plant-based cream.

Gluten-free: Make sure the breadcrumbs you use are gluten-free.
