A good basic recipe that can be varied by adding grated lemon zest and juice or cocoa powder. Apart from using less egg, it is similar to the Pound Cake recipe ( p. 164 in “Home Cooking”).
It works well with gluten-free self-raising flour (e.g. from Doves Farm) and makes a great Strawberry Shortcake (see p. 166 in “Home Cooking”).
