Pureed Parsnips

A sweet and creamy parsnip purée. It is lovely buttery and great to accompany other dishes.
In Germany, it is quite unusual to use parsnips for purée and I was a little sceptical at first. But the scepticism vanished and both myself and my daughter loved this dish- great with a stew or casserole or gravy.
